SCHISC - PORK BRESAOLA
Schisc - Bresaola comes from the best Italian pork loin whose cut, which takes a "flattened" shape, inspired its name. Schisc - Bresaola undergoes careful curing processes, such as the salting process and the adding of aromas and spices. The product is turned and massaged by hand, a process that allows the meat to better absorb the aromas and to soften. It is then left to rest for few days, after which a second massage process takes place, this time adding a traditional red wime from Lombardy. Finally, Schisc - Bresaola is bagged into a dedicated net, moving then to the drying and agin phases that last few weeks.
