The Cooked Salami is a typical Northern Italian cold cut. It comes from selected pork cuts grounded in a more or less refined way. The mixture is salted and flavored before being stuffed into a natural gut and passed to the steaming phase which can last up to 5 hours. Then we let Cooked Salami cool, ready to be eaten.
