Cooked Ham comes from a selection of the best Italian pork legs. The meat is first carefully deboned, to then move on to the absorption process (of salts and ingredients). Adding a lemon zest confers a particular and unique taste to it. The next step is known as the churning phase: the product is slowly massaged, allowing the meat to soften and the product to acquire better gastronomic quality. The producted is the pressed in molds which give it its traditional shape, then finally proceeding to the slow steaming process.
