SEASONED PROSCIUTTO CRUDO
DescriptionThe Prosciutto Crudo is a characteristic dry-cured ham of Italy and is obtained from selected pork thigh. This anatomical part is left to rest for 24 hours in special cooling cells so that the meat becomes firm to be trimmed more easily. Then there is the salting phase where the parts of the rind are treated with damp salt, while the lean parts are sprinkled with dry salt. At this point the thigh is set to "rest" to make the salt penetrate in depth evenly. After this phase the thigh is washed with warm water, dried in the air and hung. The thigh is then covered with grease, a mixture of pork fat with salt and pepper to soften the surface layers, and left to mature.
