Mortadella is a cold cut typical in Emilia Romagna, and it is produced using selected cuts of pork meat. The starting material is composed of lean meats to which cubes of fat, salt, pepper and herbs are added. The mixture of meat and aromas is then stuffed into natural casings. Mortadella is then cooked in dry hot air ovens at a temperature of 70°C for about 20 hours. The product is then cooled and packaged.
