STEAM COOKED BEEF TONGUE
The Steamed Tongue is a typical specialty of Lombardy obtained from cleaned bovine tongues, salted with brine, softened and gently churned. They are then steamed, stripped and printed while still hot. After being wrapped in a net, they are cooked a second time, cooled and finally packaged.
