The Nervetti Salad is a typical Northern Italian dish and is composed of tendons and cartilage from beef shin that, once boiled for more than two hours, are detached from the bone and cut into pieces. Olives, cucumbers, onions, peppers, salt, oil and natural flavors are then added to the meat, which will then be served as an appetizer.
