Guanciale comes from the pork cheek, a part with a presence of muscles (lean part) and a exquisite fat component. After the selection of extremely fine meat, the meat selected is salted with a salt solution that is made up of salt and natural aromas; a gentle massage by hand allows the substances to penetrate into the product. After a two-week maceration phase, it is time for the drying phase and, finally, the aging one, which lasts about 15 days. This product has a distinctive flavor that vaguely recalls that of "pancetta" (bacon); however, its taste is overall more sweet, due to the greater presence of lard flavors.
