GRASS - LARD
Grass - Lard is produced starting from the chuck of an Italian pig of first choice, which is then softened through a delicate manual pressing. It follows the immersion of the meat in the brine the brine, and a weight placed on it helps to keep the product immerged, allowing it to slowly absord salt and aromas in a constant way. This allows the product to acquire its characteristic taste. One of our expert workers checks, turns and massages the product every week, making sure that the salt salution penetrates the entire product in a homogeneous way. In the salt solution you have, besides water and salt, a lemon zest: it is this that gives the cold cut an extremely fresh and peculiar flavor. At the end of this long process, the product is moved to the drying phase, where it is once again massaged by hand with a mixture of spices carefully selected.
