Fiocco is a cold cut that comes from the pork thigh. Its sweetness and softness come from salting process, strictly done by hand and from “sugnatura” (greasing the product with pork fat), necessary to soften the lean part. The aging phase lasts about 9 months in an environment where humidity is constantly checked, to allow it to acquire the typical aroma and flavor.
