The Culatello is a cold cut made from pork thigh that is degreased, deboned, separated from the fiocchetto and trimmed by hand, in a process that gives it its characteristic "pear" shape. After these steps, and after about 10 days, others processes take place: salting the meat by hand, bagging the meat in the bladder of the pig, and binding the meat by hand with a twine. The aging phase takes from 10 to 14 months, depending on the size of the product.
