FRESH COTECHINO 3 PIECES
Cotechino is one of the most typical foods from Northern Italy and, together with the Zampone, is one of the mainstays of the finest winter meals. Deriving its name from the Italian word for pork rind, "cotica", the meat is carefully degreased and then enriched with salt and spices. Cotechino is usually served with lentils, according to the tradition of the region. The choice of the meat and a careful curing of the product allow Cotechino to fully acquire and express its delicate, yet exquisite flavour.
COOKING TIPS: put the Cotechino in a pot with plenty of cold water after having it pierced with a toothpick. Bring to a boil and cook over a low heat for two hours.
