Carne salada del Trentino is a traditional charcuterie product from Trento obtained from beef meat. The meat is sprinkled with a mixture of salt and other ingredients put in a container where they will remain from 2 to 5 weeks depending on the size. During the maturation period it must be stored in dark rooms at a maximum temperature of 12 ° C and must be massaged at least every 2/3 days.
