The spicy Capocollo is a salami obtained from the processing of the upper part of the neck and shoulder of the pig, with the addition of salt, black pepper, spices and hot chilli pepper from Calabria. It is then salted "dry" and seasoned for about two months. It is characterized by a slightly spicy taste.
