Pork Bresaola comes from the best Italian pork meat whose cut which undergoes careful curing processes, such as the salting process and the adding of aromas and spices. The product is turned and massaged by hand, a process that allows the meat to better absorb the aromas and to soften. It is then left to rest for a few days, after which a second massage process takes place, this time adding Bonarda red wine from Lombardy. Finally, it ages for at least 90 days.
