LOMBARDY PORK BRESAOLA
Lombardy Pork Bresaola comes from the best Italian pork meat from Lombardy, the cut undergoes careful curing processes, such as salting, spicing and with the addiction of Bonarda DOC red wine. It is then turned and massaged by hand. This process softens the meat and allows it to better absorb the flavours and aromas. It is then left to rest for a few days, after which a second massage process takes place, this time adding Bonarda red wine from Lombardy. Finally it is aged for at least 90 days.
