BRESAOLA PUNTA D'ANCA
The Bresaola Punta d'Anca comes from the best cut of meat that bears his name. The meat is subjected to a salting phase using spices and salt. The salted meat is then moved to temperature-controlled cells where they are periodically rotated. This procedure favors the migration of salt and natural aromas. Finally it is stuffed into casings and seasoned.
