The Mini PicNic Salamis are produced from the careful selection of Italian pork meat. The different cuts of meat undergo a traditional coarse mincing phase. Other curing phases follow, from mixing the meat with the selected spices and aromas, to the bagging of the meat into a natural casing, still tied by hand to these days. The drying phase lasts 5 days, and it takes place in a dedicated room. After this, there is the aging phase, which is the most delicate and important one; for this reason, it is monitored constantly by our expert workers.
